Folks we have a show stopper here. These St. Louis Rib Lollipops are worth every cut. A tender pop of sweet and smoky rib meat is stealing the stage! When your plate is cleared, go back for another round!
Ingredients

2 Rack–St. Louis Rib Racks

1 Cup – Blue Ribbon BBQ Rub

1 stick – Butter
-
1 cup – Blue Ribbon BBQ Sauce

½ Cup – Chicken Stock
Directions
Remove the membrane from the ribs. Cut apart the ribs between the bones.
With a paring knife, starting at one end of the rib, cut away and peel down the meat from the bone, until about ½ way down. Fold the meat over itself down to the other end to make a lollipop.
Season generously with Blue Ribbon Rub.
Tie each lollipop at the base of the meat so that the meat does not expand and detach while smoking.
Pre heat smoker to 275 degrees.
Place the lollipops over indirect heat and smoke for 2 ½ hours.
Make a “boat” out of double lined, heavy duty aluminum foil. In the bottom, place the butter, stock and Blue Ribbon BBQ.
Place the lollipops, meat down in the boat and fold the edges of the foil in to cover the lollipops. The exposed bone sides will be sticking out of the foil
Smoke for another 1 hour.
Remove the lollipops from the foils and baste with more sauce. Return to the smoker for an additional 15-20 minutes.
Allow to rest for 10 minutes and enjoy!
