Ingredients
- 1 Can – Corn, drained and rinsed
- 2 Can – Cream Style Corn
- 5 – Eggs

¼ C – Butter, melted

3 T – Sugar

½ C – Heavy Cream

¼ C – Cornstarch
-
4 T – Elote Loco Street Corn Seasoning
-
½ C – Cotija Cheese, Grated
- ½ - Red Onion, small dice

½ C – Cilantro Chopped
Directions
- Preheat oven to 400 degrees.
- In a large bowl, combine all the corn, eggs, melted butter, sugar, heavy cream, cornstarch, Elote Loco, Cotija cheese, diced red onion and chopped cilantro. (save about 1 TB of cilantro for garnish at the end)
- Whisk together until well combined.
- Pour the mixture into a lightly greases casserole dish.
- Bake for 60-80 minutes until the pudding is set in the middle and browned.
- Rest for 10 minutes before serving.
- Garnish with more grated cotija cheese and chopped cilantro.
