Ingredients

1 L– Salmon (cooked)

1 T – Shallot, minced

3 T – Red Pepper, fine dice

3 T – Green Pepper, fine dice

3 T – Dill, Chopped
-
2 T – Chives, Chopped
-
1 ½ t – Tackle Box Fish Seasoning
-
½ C – Mayo
-
1/3 C – Panko Breadcrumbs
Plus more for crust

2 T - Olive Oil
Directions
- In a bowl, break the salmon into a large flake and add the remaining ingredients except for the oil.
- Mix together until everything is well incorporated. The salmon will break down more as you mix.
- Make the cake mix into 2 ½ oz cakes.
- Heat oil in a large skillet over medium/low heat.
- Coat the cakes in the extra panko and then place them in the skillet. Cook the cakes for about 4-5 minutes each side.
- When the cakes are heated through and the crust is a golden brown they are ready to serve.
- Enjoy with tartar sauce.
