This Taco Bell Chicken Quesadilla Copycat will give Taco Bell a run for its money! Chicken and Cheese smothered in a creamy Jalapeno sauce and browned and crisp to perfection, you'll never think of Taco Bell the same when you can make this right at home!
Ingredients
4 Large – Burrito Shells
8 Oz – Cooked Chicken
12 Oz – Shredded Cheddar/Jack Cheese
½ C – Mayo
8 slices – Pickled Jalapeno

1 T – El Capitan - Baja Chili Citrus Taco Seasoning & Rub

Directions
Preheat griddle to 350 degrees.
In a small food processor, combine the mayo, jalapenos and El Capitan. Blend until smooth.
On one half of a burrito shell, spread about ½ cup of shredded cheese topped with 2 oz of cooked chicken. On the other side of the shell, spread 2 TB of the jalapeno mayo.
Fold the two side together.
Lightly grease the griddle and cook the quesadilla on each side for about 2-3 minutes until lightly golden brown.
Cut into 1/4s and enjoy!
