Ingredients
- 2 LB – TriTip

4 T – Say “I Moo” SPG Rub
- 1 lb – Strawberries

2 T– Red Onion or Shallot, minced
-
2 t – Fresh Oregano, chopped

2 T – Parsley, chopped
-
2 T – Red Wine Vinegar

3 T – Olive Oil
-
1 t – Say “I Moo” SPG Rub
Strawberry Chimichurri
Directions
- Preheat smoker to 225 degrees.
- Season the tritip generously with Say I Moo and let rest at room temperature for 20 minutes to adhere the seasoning.
- Place the tritip on the smoker and smoke until the internal temperature reaches 120 degrees.
- While the tritip is smoking, make the chimichurri by combining the listed ingredients in a bowl.
- Increase the temperature of the smoker or grill to sear.
- Sear the tritip on both sides for about 2-3 minutes until a nice crust forms.
- Remove from the grill and you can slice immediately.
- Top with the strawberry chimichurri and enjoy!
