Ingredients
- 8-12 OZ – Walleye, cleaned and skinless
- 2 TB – Olive Oil
- 1 TB – The Backyard Seasoning
- ½ Cup – Slivered Almonds
- 2 TB – Butter
- 1 – Juice from ½ Lemon
- Parsley and lemon wedges for garnish
Directions
- Clean the walleye filet if needed and remove the bones.
- Season the fish generously with The Backyard seasoning.
- Heat a skillet over medium high heat.
- Add olive oil to the pan and place the fish in the pan, serve side down.
- Sear the fish for 3-4 minutes until it becomes golden brown.
- Carefully flip the fish and cook for an additional 4-6 minutes until cooked all the way though.
- Remove from the pan and set aside to rest while you make the sauce.
- Return the skillet to the heat and add in the almonds.
- Cook, stirring or shaking constantly for 2-3 minutes until the almonds begin to brown.
- Remove from heat and continue to stir while the almonds darken.
- Add butter and lemon juice and stir until the butter is melted.
- Plate the fish with your favorite sides and top with the almondine sauce.
- Garnish and enjoy!
