Ingredients
-
3 LB Chicken Wings
-
2 T Olive Oil
-
1/2 C Bee Sting Hot Honey Chipotle BBQ Rub
-
1 Watermelon
-
1/2 C Balsamic Vinegar
-
1 C Sugar
-
2 Oz Ginger- Peeled, No Need To Chop
-
3 T Cornstarch Slurry- 50/50 Cold Water and Cornstrach
-
Lime Wedges
Directions
Peel and chop the watermelon. Put the fruit in a small stockpot.
Add the Balsamic vinegar, sugar and ginger. Place over medium heat, stirring occasionally until the mixture begins to boil.
Reduce the heat to simmer and cook for 2 hours.
While the sauce is cooking, preheat the grill or smoker to 350 degrees.
Rub the wings with the olive oil and then with the Bee Sting Rub.
Place on the smoker for 35-45 minutes, flipping once about halfway through.
Strain the sauce through a fine strainer into a smaller saucepot.
Return to heat and bring to a slow boil. Reduce for 10-15 minutes.
Then use the cornstarch slurry to thicken to a BBQ sauce consistency.
Once the wings reach and internal temperature of 165 degrees, toss them in the watermelon sauce. Serve with lime wedges and enjoy!
