Our Tomato Basil Parmesan Bratwurst Seasoning is the perfect balance of flavors, combining sweet tomato, aromatic basil, and rich Parmesan cheese for a delicious accompaniment to your favorite bratwurst dish. 

  • Blend with veal, pork or beef or, for a healthier take, use chicken or turkey
  • 1 Lb. B Unit for 25 lbs. of meat
  • Per Pound: Use 1 Tbsp + 2 tsp of seasoning

How To Use

(For 12-1/2# Batches Divide Following By 1/2) 

You will need:

  • 25# of Lean Pork Trims
  • 2 cups Water
  • 1 pkg. of "B" Seasoning

Suggested Procedure:

Grind regular trims through 1/8” plate. Add water and Brat Seasoning of your choice, and mix for 3-5 minutes until meat becomes tacky. Stuff into 32-35mm hog casings or 4” x 20” fibrous casings, if stuffed into a 4 x 20 freeze and then slice into patties. You can also make into bulk.

Chicken precooked !

Ground up five pounds boneless skinless chicken thighs on my grinder medium plate. Then I added the mix plus 1 teaspoon cure no 1 since I was going to smoke them. Let sit over night to cure then I stuffed the sausage into 32mm cellulose casings. I smoked them at 170 for two hours then brought them to 170 in a water bath n cooled them down in cold water bath. They popped right out of the casings after I cooled them. Pretty tasty and I will probably make some fresh pork one in hog casings. I think some hi temp mozzarella cheese would be good in them too.

Unique and different

A wonderful brat seasoning. It truly has an amazing flavor profile. It's a nice change of pace from traditional brats. I mixed 16# elk with 4# of pork back fat. 1 pint of heavy whipping cream, 4 cans of fire roasted tomatoes with green chilies and 7 very hot peppers chopped finely. I always run my seasoning 20% heavier than designed, not too salty at all. The leftover from the stuffer made excellent pizza toppings. I am ordering more after I finish this review!
