  • Depending on the area, boudin sausage has been to made from a variety of ingredients including: pork parts, pork blood, rice and seafood. Most widely used in Louisiana cuisine.
  • Make into links or rope sausage
  • Per Pound: Use 1 Tbsp + 1 1/2 tsp of seasoning + 1/8 tsp of Speed Cure

How To Use

(For 12-1/2# Batches Divide Following By 1/2)

You will need:

  • 5 lbs. Rice (Uncooked)
  • .06 lbs. Finely Minced Parsley
  • 5 lbs. Milk
  • 9 lbs. Fat Pork Meat
  • 5 lbs. Raw Onions
  • 6 lbs. Beef Blood

Suggested Procedure: The raw onions should be chopped into small pieces and sautéed in lard until they are golden brown. Allow onions to cool. Cook rice according to package; allow to cool. Grind Pork through a 3/8" Grinder Plate and place in mixing container. (Be sure all the fat pork has been cholled to at least 38-40 degrees F before grinding). Add the cooled onions to the meat mixture along with the other ingredients including the blood. Mix throughly. Stuff into 35-38mm Hog Casings. Place sausage in water at 170-180 degrees F until the internal temperature is at least 160 degrees F. Allow to cool overnight before using.

Cloves! 😞

There is an overwhelming flavor of cloves and ZERO spice or anything that would make the flavor at all complex. Very disappointing! Was able to save the sausage with my own Cajun spice mix and a load of red pepper. Skip this one…..

Pumpkin Spice

If you like the taste of a strong pumpkin spice then you'll love this. Nothing about this mix taste like any boudin I've eaten. 0 stars!

If you like the taste of wild game DO NOT BUY

I can not taste or smell anything other than the seasoning. One particular spice (clove maybe) overpowers everything involved. Disgusting. Trying to figure out what to do with 25lbs of deer meat without completely wasting.
