How To Use

You will need:

  • No. 783 Smoked Texas Hot Link Seasoning
  • 32-35mm Natural Hog Casings
  • Ground beef and pork

Suggested Procedure:

  1. Rinse and soak your casings as directed.
  2. Chill your grinder parts for 30-45 minutes before grinding.
  3. Cut meat into 3” cubes and freeze for 20 minutes.
  4. Grind the meat through a 3/8” plate and then a 3/16” plate.
  5. Add No. 783 Smoked Texas Hot Link Seasoning and mix for 2 minutes.
  6. Stir in pink cure and beef stock, then mix until tacky.
  7. Stuff casings with a ¾” horn and link sausages every 8-10 inches.
  8. Refrigerate sausages overnight to develop flavor and dry casings.

Smoking Procedure:

  1. Preheat smoker to 110°F and hang sausages inside.
  2. Smoke at 110°F for 1 hour, then 120°F for 1 hour, and increase by 10° each hour until you reach 170°F.
  3. Smoke until sausages reach an internal temp of 150°F.
  4. Let sausages rest at room temp for 30 minutes.
  5. Cool completely, then reheat on the grill over indirect heat.
  6. Serve with BBQ sauce and enjoy!
