  • Blend with cubed pork butt before grinding
  • .88 Lb. B Unit for 25 lbs. of meat or .44 C unit for 12.5 lbs. of meat
  • Per Pound: Use 2 Tbsp + 1/2 tsp of seasoning

How To Use

(For 12-1/2# Batches Divide Following By 1/2) 

You will need:

  • 25 lbs. of Lean Pork Trims
  • 2 cups Water
  • 1 pkg. of "B" Seasoning
  • 2 1/2 lbs. High Temp Swiss

Suggested Procedure:

Grind regular trims through 1/8” plate. Add water and Brat Seasoning of your choice, and mix for 3-5 minutes until meat becomes tacky. Stuff into 32-35mm hog casings or 4” x 20” fibrous casings, if stuffed into a 4 x 20 freeze and then slice into patties. You can also make into bulk.

Salt, Dextrose, Mushrooms*, Hydrolyzed Soy Protein (9%), Spices, Onion*, Caramel Color, Less Than 2% Silicon Dioxide (Prevents Caking). *Dried.

The best one so far

The mushroom bratwurst sausage is so good as my grandbaby say. You can't miss with this seasoning you can leave it in Patti form or in links.

Just made some

I put in 1lb hi temp swiss with 12lbs of meat and 1/2 of the seasoning package and pressed out patties freezing them right away. Next morning, I did some R&D and Quality control testing frying up in a pan and pleasantly surprised. I ate 2 big patties already. I mainly got swiss flavoring but the spices are spot on and great. I'm ordering more and going to try some in a Chicken brat next. Highly recommend putting some swiss in there too.
