8 Oz Chicken- Cooked, Shredded

1 T El Jefe Honey Adobo Taco Seasoning & Rub

1 1/2 Cup Corn- Thawed

1 Cup Black Beans- Rinsed

2 t El Dinero Hatch Chili Verde Seasoning & Rub

1 Tomato- Diced
-
1 Small Onion- Diced
-
1 Lime - Juiced

2 t El Capitan Baja Chili Citrus Seasoning & Rub

3 Cups Cheddar Cheese- Shredded

Shredded Lettuce
-
Sour Cream
-
6 Large Flour Tortillas
Directions
Preheat oven to 400 degrees.
Mix chicken and El Jefe Seasoning
Mix the corn, beans and El Dinero Seasoning
Make the Pico de Gallo by combining the diced tomato, onion, jalapeno, cilantro, lime juice and El Capitan Seasoning.
These 3 mixtures will be the layers in the pie
In an 8” or 9” spring form pan, lightly sprayed with cooking oil, place a tortilla, and center it.
Sprinkle ¼ cup of cheese and then ½ of the shredded chicken.
Layer another tortilla with ½ cup of cheese and ½ of the corn and bean mixture.
Place another tortilla with ½ cup of cheese and spread ½ of the Pico de Gallo.
Repeat another layer of beans and corn, then one more layer of chicken. Top with a tortilla and the sprinkle remaining cheese.
Place in the oven for 25-30 minutes or until heated through.
Garish with shredded lettuce, remaining Pico de Gallo and a dollop of sour cream.
