Ingredients

2 Lb Mashed Potatoes- Cold Left Overs

2 C Swiss Cheese- Shredded

12 Oz Bacon- Chopped

2 T Chives- Chopped

1 T King Shallot Black Garlic

1 C Flour
-
3 Eggs
-
4 C Panko Breadcrumbs
Directions
Sauté the bacon until crispy and remove the meat from the rendered fat.
Combine the mashed potatoes, cooked bacon, Swiss cheese and King Shallot in a bowl and mix until well combined.
Form the mixture into 2” ball and set in the freezer for 10 minutes to chill.
Prepare the breading station. One bowl for the flour, one for the eggs (beaten) and one for the breadcrumbs.
Roll a potato ball in the flour and then drop into the beaten eggs. Coat well and then toss in the breadcrumbs until well coated.
Preheat air fryer to 375
Spray the basket with cooking spray and place in 6-7 of the breaded mashed potato balls.
Fry for 10-15 minutes until crispy and heated through.
Cook remaining balls and enjoy!
