Ingredients
- 4 – Pork Chops, 2” cut
- 1 – Macintosh Apple
- 2 oz – Gouda Cheese, sliced

¼ C – Apple Pie Rub
- 16 Slice – Bacon (not thick cut)

½ C– Maple Bourbon Wing Sauce
Directions
- Preheat smoker to 275 degrees.
- Cut a pocket into the pork chops from one side, leaving the chop mostly intact.
- Peel and slice the apple, and stuff 2-3 slices into each chop along with about ½ oz of sliced gouda.
- Close the stuffed chop and then season generously with Apple Pie Rub.
- Wrap each chop in 4 slices of bacon, use a toothpick to secure if needed.
- Place the stuffed chops on the smoker for 60-80 minutes until the bacon is well rendered and the internal temperature of the pork reaches 140 degrees.
- Baste the chops generously with Maple Bourbon Wing Sauce and smoke for an additional 5-10 minutes.
- Rest for 10 minutes before serving.
