Onion rings are always a great appetizer, but have you ever tried bacon wrapped onion rings? These will be a hit for everyone!
Ingredients
- 24 OZ – Bacon
- 2 – Onions (big ones)

3 T – Rodeo Rub
-
½ C – Mayo
-
2 T – Honky Tonk Sauce
Directions
- Preheat grill or smoker to 275, set up for indirect heat.
- Peel the onions and slice into ¾” thick slices.
Use the outer rings, as they will be easiest to wrap. Separate in twos. Using two onion rings together will help hold shape better while cooking.
- Wrap the onions in bacon. Each onion ring will take at least 2 slices of bacon to wrap fully. Secure with toothpicks if necessary.
- Season the onion ring with Rodeo Rub on all sides.
- Place the onion rings on the smoker over indirect heat but directly on the grates.
- Smoke the rings for 45 minutes and then flip.
- Smoke an additional 40-50 minutes until your desired texture.
- Mix together the mayo and Honky Tonk sauce for a spicy dipping sauce and enjoy!
