Cock-a-doodle don't mind if I do! This Red Rooster Fried Cauliflower is a nice sweet heat on a tender cauliflower nugget . On top of a bed of black ginger rice, each saucy panko crusted floret will have your crowing. You won't even notice it's vegetarian!
Ingredients

2 Bags Cauliflower Florets

3 Eggs- Beat

2 Cups Panko Breadcrumbs

2 T Open Sesame Everything Bagel

1 Cup Black Rice

2 Cups Chicken Broth
-
1 t Ginger
-
1 1/2 Cups Red Rooster Sweet Chili Sauce

2 T Green Onion - Sliced

1/2 t Crushed Red Pepper Flakes

1/2 t Toasted Sesame Seed
Directions
In a small sauce pan add chicken broth, black rice and ginger and prepare per the directions.
Preheat air fryer to 400 degrees and set to 13 minutes .
Cut stems off cauliflower florets for more of a nugget shape.
In a medium bowl beat 3 eggs.
In another medium bowl add panko breadcrumbs and seasoning and mix well.
With one hand dip cauliflower in egg and let excess egg drip off.
Put dipped cauliflower into panko and toss until covered in crumbs. With opposite hand remove cauliflower and set on a plate until all cauliflower pieces are dipped and breaded.
Arrange cauliflower on air fryer rack leaving space between for more even airflow. This process may need to be repeated 2-3 times .
After all cauliflower is out of the air fryer, in a medium bowl add sauce and cauliflower and toss. Don’t do this step until ready to serve or breading will get soggy.
Plate up rice and cauliflower, garnish and enjoy!
