Ingredients
- 2 LB – Shrimp, 16/20 Peeled and Deveined
- 12 - Jalapenos
- 18 Slice – Bacon

3 T – Blue ribbon Competition Style Rub

½ C – Blue Ribbon BBQ Sauce
Directions
- Preheat grill, for indirect cooking, to 375 degrees.
- Cut the jalapenos into big pieces, about 1” square and ¼” thick. Cut out the center pith and seeds.
- Butterfly the shrimp and season them generously with Blue Ribbon rub.
- Cut the slices of bacon in ½.
- Lay a piece of bacon down and place a jalapeno piece in the middle. Press the jalapeno down to lay as flat as possible.
- Place a butterflied shrimp on the jalapeno, sitting with the tail up.
- Fold over the bacon to cover the shrimp and secure with a toothpick.
- Bring the tail of the shrimp over the top and secure to the top of the toothpick. It should look like a scorpion.
- Repeat with the remaining shrimp and bacon.
- Place the bites on the grill and cook for 25-40 minutes until the bacon is rendered to your liking.
- Baste the bites with Blue Ribbon BBQ sauce and cook for an additional 3-4 minutes.
- Remove from the grill and serve immediately!
