Ingredients
- 1 LB – Breakfast Sausage, bulk

2 T – Chicken and Waffle Wing Rub
- 1 Quart – Pancake Batter
- 8 – Eggs

3 T – Butter
- Syrup for dipping
Directions
- Preheat griddle to medium high heat.
- Portion the breakfast sausage into 8 equal meatballs.
- Place the breakfast sausage balls on the griddle, leaving 5 inches in between each one.
- Smash the meat with a burger press. Season generously with Chicken and Waffle Wing rub.
- Once the patties are well seared flip them.
- Pour ¾ cup of pancake batter on top of each pressed patty.
- Once the pancake starts to bubble, flip and cook the other side fully.
- Fry the eggs to your desired style in butter.
- Once the smash-cakes are fully cooked, top each one with a fried egg and then serve with a side of maple syrup for dipping.
