The party snack of the summer! Buffalo chicken meatballs served with minced carrots and celery for the perfect meatball.
Ingredients
- 2 LB – Ground Chicken
- 2 – Eggs

1 C – Breadcrumbs
-
½ C – Minced carrots and celery
-
5 T – Buffalo Cajun Wing Rub

3 T – Cooking Oil
-
¼ C – Blue Cheese Crumbles
- Ranch Dressing
Directions
- Preheat oven to 350 degrees.
- Combine the ground chicken, eggs, breadcrumbs, Buffalo Cajun Wing Rub and only 1/3 cup of the carrots and celery in a bowl. (the rest of the minced vegetables will be used as garnish)
- Mix well until the meat becomes a bit tacky.
- Form the meat into 1 oz meatballs.
- Heat a sauté pan over medium/high heat with a little cooking oil.
- Add meatballs to the pan, leaving them room to roll a bit and sear them off. Rotate them every 30-45 seconds to evenly sear on all sides.
- Repeat until all the meatballs are seared.
- Place the meatballs on a sheet tray and into the oven for 15-20 minutes until fully cooked, 165 degrees internal temperature.
- Stack the meatballs on a plate and garnish them with a drizzle of ranch dressing, crumbled blue cheese and a sprinkle of the remaining minced vegetables.
