Ingredients
- 3 LG – Chicken Breasts (boneless/skinless)

4 T – Buffalo Cajun Wing Rub

2 T – Olive Oil
- 1 Box – Cavatappi Pasta (12 oz dry)

¼ C – Panko Breadcrumbs

¼ C – Blue Cheese Crumbles
-
2 T – Green Onion, chopped
-
4 T – Butter
-
¼ C – Flour
-
2 C – Heavy Cream
-
1 C – Milk
-
2 ½ C – Cheddar Cheese, shredded

3 T – Buffalo Cajun Wing Rub
Cheese Sauce
Directions
- Cook pasta according to the directions on the box.
- Cool the pasta under cold running water and set aside.
- Preheat oven to 350 degrees.
- Season the chicken generously with Buffalo Cajun Wing Rub and sear off on both sides for about 4 minutes.
- Place the chicken on a sheet tray and into the oven to cook until the internal temperature of the chicken reaches 165 degrees.
- While the chicken is cooking, make the cheese sauce.
- Melt butter over medium heat in a 2 qt saucepan.
- Add flour and cook, stirring constantly for 2 minutes.
- Slowly add I the cream, stirring constantly until well incorporated. Add milk.
- Stir in the cheese and keep stirring until the cheese is melted in and the sauce is smooth.
- Season with Buffalo Cajun Wing rub.
- In a large bowl, mix the pasta and the cheese sauce together and then pour the mac n cheese into a large cast iron skillet.
- Sprinkle with panko breadcrumbs.
- Place the mac n cheese into the oven to bake until the panko is slightly browned.
- Remove the mac n cheese and chicken from the oven.
- Dice the chicken and place it on top of the pasta.
- Garnish with crumbled blue cheese and green onion.
