Ingredients
- 2 LB – Velveeta Cheese
- 8 oz – Pepperjack Cheese
- 12 oz – Shrimp
- 2 oz – Crawfish Tails
- 1 – Red Pepper
- 1 – Green Pepper
- 1 Can – Rotel

1 c – Shredded Mexican Cheese

1 C – Notorious P.I.G.

1 t – Cayenne

1 t – Oregano
-
1 t – Basil
-
1 t - Thyme
Cajun Seasoning
Directions
- Preheat smoker to 225 degrees
- Combine the seasonings and stir well to make the Cajun seasoning.
- Pell and devein the shrimp and then cut into smaller bite sized pieces.
- Diced the peppers
- Add all ingredients to an aluminum ½ pan along with ¼ cup of the Cajun seasoning. (Reserve the rest for other recipes)
- Place the pan on the smoker, uncovered for about 2 hours. After the 1st hour, stir every 15 minutes.
- Serve with a baguette or tortilla chips.
