Ingredients
- 1 LB – Calamari Steaks

2 C – Flour

2 T – Fish Seasoning like Old Bay or Tackle Box
- 3 – Eggs

3 C – Parmesan Cheese, grated

¼ C – Olive Oil
-
½ C – Lemon Juice
-
½ C – White Wine (dry)

1 C – Heavy Cream
- 2 Stick - Butter
Lemon Butter Sauce
Directions
- Pound out the calamari steaks to ¼” thickness.
- Stir together the Tackle Box seasoning and flour for the first part of the breading station. Beat the eggs in another bowl. The last bowl will be for the parmesan cheese.
- Bread the steaks by first dredging them in the seasoned flour, then into the egg and finally coating with the parmesan.
- Combine the lemon juice and wine in a small saucepot and place over low heat. Simmer and reduce down to ¼ cup.
- While stirring, slowly add the cream to the pot. Bring to a simmer and reduce again down to ½ cup.
- Dice the butter.
- Remove the reduction from the heat and add the butter, ¼ at a time. Stir constantly. Once the butter has melted and is incorporated, add more and repeat the process until the all the butter is mixed in. Set aside and hold in a warm place while you cook the steaks.
- Heat a skillet over medium heat.
- Add Olive oil to the pan and sear off the breaded calamari for about 2-3 minutes on both sides. Once the crust is golden brown on both sides remove from the pan.
- Dice the steaks into 1” cubes and plate.
- Drizzle with the lemon butter and garnish with parsley. Enjoy!
