Caramel Apple Pulled Pork
The perfect fall meat treat, this caramel apple pulled pork is reminiscent of a caramel apple without being overly sweet. The pork is rubbed in our sweet Apple Pie Rub then smoked and braised in Apple Cider and hunks of apple pieces for tartness. Drizzle with a little caramel at the end and serve with a fresh and crunchy apple slaw.

8 lb pork butt or shoulder

½ cup Apple Pie Rub

2 Apples, peeled and diced

2 cups Apple Cider

½ cup Caramel Sauce

½ Cup Apple Pie Rub
Slaw

3 cups Shredded Cabbage
-
2 Apples, peeled and julienned
-
1 cup Mayonnaise
-
⅓ cup Apple Cider Vinegar
-
1 T Kosher Salt
-
1 tsp Black Pepper
-
3 T Apple Pie Rub

¼ cup Sugar
Directions
Preheat smoker to 225 degrees.
Crosshatch the fat cap on the pork and then season the whole roast with ½ cup of Apple Pie rub.
Place the pork in a deep aluminum pan. Add the diced apples and apple cider to the pan and then place it on the smoker.
Smoke for 13-16 hours until fall apart tender.
Rest the pork for 20 minutes while you make the slaw.
Make the slaw by combining the listed ingredients in a bowl. Adjust seasoning to taste.
Shred pork and add a ½ cup of Apple Pie Rub and caramel. Mix to combine
Build the sandwiches on buns and top them with the slaw. Enjoy!
