Ingredients

3 lbs Pork Belly
-
½ cup Notorious P.I.G.

2 Peaches
-
1 cup Hot Honey Peach Wing Sauce

½ stick Butter
Directions
Cut the pork belly into 2” cubes. Season the pork generously with Notorious P.I.G. and let it sit out at room temperature while you preheat the smoker.
Preheat smoker to 250 degrees.
Place the pork belly directly on the smoker or on a wire rack and then onto the smoker.
Smoke for 2-3 hours until the pork reaches an internal temperature of 165 degrees and the seasoning is well tacked onto the meat.
Place the pork into a foil pan and add the Hot Honey Peach wing sauce along with the butter.
Remove the pits from the peaches and dice into ½” pieces, add to the pan with the pork.
Cover with foil and place back on the smoker. Smoke for an additional 2-3 hours until the pork is very tender.
