Ingredients
- 2 Rack – Pork Back Ribs

4 T – Bier Hall Mustard
-
5 T – Chicken & Waffle Wing Rub
- 1 Stick – Butter, unsalted

¾ C – Maple Syrup
- 12 – Waffles (large Belgian)
Directions
- Preheat smoker to 250 degrees.
- Pat the ribs dry with a paper towel and remove the membrane from the underside of the ribs.
- Slather the ribs with mustard.
- Season generously on all sides with Chicken & Waffle wing rub. Let the ribs rest at room temperature for 20 minutes to allow the seasoning to adhere.
- Place the ribs on the smoker and cook for 3 hours, or until the seasoning is well tacked to the meat.
- Prepare a foil wrap and place a few tabs of butter down and a light drizzle of maple syrup.
- Lay the ribs down, bones facing up, on the foil and then add more butter and syrup to the underside of the ribs.
- Seal up the foil wrap and place back on the smoker for 1.5-2 hours until the meat is tender.
- Remove from the wrap and place back on the smoker for 15 minutes.
- Remove from the smoker and rest the ribs for 10 minutes.
- Remove the bones from the ribs and build a sandwich with the waffles. Give them an extra drizzle of maple syrup and enjoy!
