Two of your favorite comfort foods converge to create one delicious and easy to make sandwich. A beef and bean chili base is topped on a bun with cheddar and sour cream for an easy twist on a Sloppy Joe
Ingredients
- 2 LB – Ground Beef
- Salt and Pepper to taste
- 1 – Onion, small dice
- 1 – Red Bell Pepper, small dice
- 1 – Jalapeno, small dice
- 3 clove – Garlic, sliced thin
- 1 Can – Fired Roasted Diced Tomatoes

¼ Cup – Rodeo Rub
- 1 Can – Kidney Beans, rinsed
- Burger buns for serving
- Shredded Cheese and Sour Cream to finish
Directions
- In a pot over medium/high heat, cook off your ground beef adding salt and pepper to taste. Once fully cooked, drain off in a strainer and set aside.
- Return the pot to the heat and add the diced onion and red pepper. Cook until well sweated.
- Add the can of fire roasted tomatoes, diced jalapenos and garlic. Cook for 5 minutes.
- Add the cooked beef back to the pot and season with Rodeo rub.
- Cook for 20 minutes over low heat.
- Add in the drained and strained kidney beans. Cook for an additional 10 minutes.
- Check your seasoning levels and adjust as needed.
- Toast off your buns and build your sandwiches.
- Finish off the sloppy joes with a pinch of shredded cheddar cheese and a small dollop of sour cream. Enjoy!
