Ingredients

3 Lemons- Juiced

2 Limes- Juiced

1 Lb Shrimp- Chopped

1-2 T El Capitan Baja Chili Citrus

1 Pint Grape Tomatoes- Quartered

1/2 Red Bell Pepper- Diced

1/2 Yellow Bell Pepper- Diced

1/2 Green Bell Pepper- Diced

1 Small Red Onion- Diced

2 Jalapenños- Diced
-
Cilantro- Chopped

Avocado- Diced
Directions
In a medium sauce pan poach shrimp for 2-3 minutes in a low boiling water with salt and half of a lemon.
Strain and cool shrimp and cut into bite sized pieces.
In a medium bowl put shrimp, lemon and lime juice and PS El Capitan Baja Seasoning and marinate for 20 minutes.
In a large bowl add shrimp, peppers, onion, cilantro, and stir together. Add in avocado and fold in until all ingredients are well combined.
Serve chilled with Chips.
