1 1/2 tsp | Farm House Veggie Blend, divided |
2 T | Butter |
1 tsp | Olive Oil |
1/2 cup | Scallions, sliced thinly |
1 cup | Asparagus, sliced thinly |
2 cups | Spinach, fresh, chopped |
1/3 cup | Parmesan, shredded |
1 tsp | Italian Parsley |
Instructions:
- Preheat oven to 400° F.
- In a mixing bowl, whisk together eggs, milk, and 1 teaspoon of Farm House. Set aside.
- Heat butter and oil In a small cast iron skillet, over medium heat. Sauté scallions and asparagus for 2 minutes, then add spinach and ½ teaspoon Farm House and sauté another minute.
- Pour egg mixture over vegetables, and gently stir with rubber spatula. Add parmesan cheese and stir to incorporate. Top with parsley and bake 16 to 18 minutes.
- Remove from oven, cool 5 minutes, then slice and serve.
