Ingredients

1/4 Cup Cooking Oil

12 Oz Summer Sausage or Hard Salami

10 Eggs
-
2 Bakers Potatoes
-
1/2 Cup Milk
-
3 T Grate State Cheesy Blend
-
1 T Green Onion- Chopped
Directions
Cut the potatoes into large, but bite sized, pieces. Boil them until they are al dente, not quite done. Strain and allow to cool.
In a large sauté pan, heat oil and pan fry the potatoes.
Dice the summer sausage into a medium dice.
Add the summer sausage to the pan and cook until the sausage starts to become crispy.
Scramble the eggs and milk together and add the mixture to the pan.
Gently stir occasionally until the eggs are set.
Sprinkle the dish with Grate State and give everything a final stir.
Plate and garnish with green onion.
Tip : Add you favorite hot sauce!
