Grilled chicken Caesar salad with the fresh flavor of lemon juice, Caesar dressing and parmesan cheese!
Ingredients
- 1 LB – Chicken Breasts

4 T – Caesar Style Wing Rub
- 3 Head – Romaine
-
2 T – Olive Oil
-
2 T – Lemon Juice
-
½ C – Caesar Dressing
-
½ C – Croutons
-
½ C – Parmesan Cheese
Directions
- Set up your grill for indirect cooking and preheat to 350 degrees.
- Season the chicken breasts generously with Caesar Style Wing rub.
- Place the chicken over indirect heat and cook until the internal temperature reaches 165 degrees.
- Remove from the grill and rest.
- Cut about ¼ inch off the bottom of the romaine heads and then cut them in ½ lengthwise.
- Drizzle with olive oil and then season with Caesar style rub. Drizzle with lemon juice.
- Lightly grill the romaine over direct heat, just to barely char the outer leaves.
- Remove the lettuce from the grill and plate you salad.
- Slice the chicken and arrange on a platter with the grilled lettuce. Top the platter with Caesar dressing, croutons and parmesan cheese.
