2 Lb 21/30 Shrimp- Peeled and De-Veined

2 Cups Breadcrumbs

2 T Parsley- Chopped

1 Cup Flour
-
2 T Honky Ton Hot Chicken Rub

3 Eggs- Beat
-
1 Cup Mayo
-
1/4 Cup Frank's Red Hot
-
1 T Yellow Mustard
-
1 Stalk Celery
-
1/4 Cup Onion- Diced
-
2 T Pickle Relish
-
1/2 t Dill
-
1 T Lemon Juice
-
Black Gold Potato Pancakes:
-
3 Large Baker Potatoes
-
3 T Flour
-
1/2 Small Onion- Small Diced
-
2 Eggs- Lightly Beat
-
2 T Black Gold- Garlic Pepper

2 T Parsley- Chopped

Creamy Slaw:
-
1/2 Head Red Cabbage- Shredded
-
1 Orange Bell Pepper- Diced
-
1/2 Small Onion- Small Dice
-
1/2 Cup Mayo
-
1 T Red Wine Vinegar
-
1 T Yellow Mustard
-
2 T Sugar
-
2 t Multi Tool Ultimate Blend

2 t Tackle Box Fish Seasoning

1 t Pepper

1/2 t Celery Seed
Directions
Preheat deep fryer to 350 degrees F.
Set up the breading station. In one bowl, combine flour and Honky Tonk seasoning. One bowl the beaten eggs. And in the next bowl, combine the breadcrumbs and parsley.
Holding onto the tails, coat the shrimp in the flour. Then into the eggs until well coated. Then, finally into the breadcrumbs.
Once breaded, fry the shrimp for 4-5 minutes or until the breading is golden brown.
Combine the ingredients for the remoulade in the blender and combine until just a few chunks remain. Use for dipping.
Black Gold Potato Pancakes:
Shred potatoes and place in a strainer to drain. Compress the potatoes to get out as much moisture as possible.
Combine all ingredients.
Heat some oil in a sauté pan over medium high heat.
Make pancakes out of ½ cup portions of pancake mix.
Fry on each side for 4-5 minutes or until golden brown.
Serve with apple sauce.
Creamy Slaw:
In a medium bowl add cabbage, pepper, onion.
Add and mix remaining ingredients until all ingredients are well combined .
Let rest 10 minutes and season to taste if necessary .
Serve and enjoy!
