This Jackpot Salmon pinwheels will have your head spinning. Bursting with flavor you can't go wrong with this delicious dinner.
Ingredients
- 3 LB – Salmon Filet, skinless
- 8 oz – Cream Cheese
- 5 oz – Spinach

1 T – Olive Oil
-
2 T – Garlic Minced
-
1/3 C – Jackpot Honey Mustard Rub

½ C – Jackpot Carolina Gold Sauce
Directions
- Preheat oven to 350 degrees.
- Trim the salmon as needed.
- Heat a sauté pan and wilt the spinach in oil. Add garlic and cook for one minute, stirring constantly.
- Place the sauteed spinach in a bowl and allow to cool for 5 minutes.
- Add cold cream cheese to the spinach and stir until well combined. (Cold cream cheese will help cool the spinach)
- Season the salmon generously with Jackpot Rub.
- Spread the cream cheese mixture over the top of the salmon and spread.
- Starting on the non-tail side, roll up the salmon and then secure with 5 skewers. Evenly spaced to cut the pinwheels.
- Cut the pinwheels and place them in a cast iron pan, remove the skewers one the pinwheels are flat in the pan.
- Season the tops of the pinwheels with more Jackpot rub before placing the pan in the oven to bake.
- Once the salmon reaches an internal temperature of 145 degrees, remove the pan from the oven and rest for 5 minutes.
- Finish with a drizzle of Jackpot Carolina Gold Sauce, serve and enjoy!
