Ingredients

4 C – Mashed Potatoes, leftover
- 12 oz – Bacon

½ C – Parmesan Cheese
-
½ C – Green Onion, Chopped

1 T – Bacon Bomb
- 16 – Cheddar Cheese cubes, ¾”
- 2 Containers – Biscuit Dough
Directions
- Preheat oven to 350 degrees.
- Roughly chop the bacon and cook it in a medium sized skillet over medium/high heat. Cook, stirring occasionally until the bacon is well rendered and crispy.
- Strain the bacon and add it to a bowl with the mashed potatoes, parmesan cheese, green onion and Bacon Bomb.
- Mix until well combined.
- Flatten a biscuit dough until it is about ¼” thick and stretch it to be about 4” wide.
- Place 2 tb of mashed potatoes in the center of the biscuit. Place a cheese cube in the mashed potatoes and then cover the cheese with an additional 2 TB of potatoes.
- Wrap the biscuit dough around the mashed potatoes and then set it on a parchment lined sheet tray, seam down.
- Repeat the building process with the remaining biscuit dough.
- Place in the oven to bake for 20-25 minutes until they are golden brown.
- Allow to cool for 5 minutes before enjoying!
