Nashville Hot Chicken Sandwich
Nashville Hot Chicken is a spicy breaded chicken unlike any other. It's not "buffalo" chicken, its HOT chicken. Nashville Hot Chicken is comprised of three components: thick bread to soak up the juices, fried chicken coated in a flavorful and hot dry rub, and tangy pickles. Our version also has a creamy pickle-laced slaw to balance out the heat.

Honky Tonk Hot Chicken Rub, divided |
1/2 cup | Flour |
1 tsp | Kosher Salt |
1 cup | Buttermilk |
2 cups | Vegetable Oil, for frying |
Spicy Slaw | |
1/2 cup | Mayonnaise |
2 T | Sour Cream |
3/4 tsp | Honky Tonk Hot Chicken Rub |
3 T | Sweet & Spicy or Dill Pickle Juice |
2 cups | Shredded Cabbage, or Coleslaw Mix |
1/4 cup | Red Onion, sliced thin |
1 T | Parsley, chopped |
4 | Kaiser Rolls, butter toasted |

Instructions:
- Prepare the spicy slaw/mayonnaise: In a mixing bowl, whisk together mayonnaise, sour cream, Nashville Hot Chicken rub, and pickle juice. Set aside ⅓ cup of this sauce to spread on sandwiches. To the remaining dressing, add shredded cabbage, red onion, and parsley. Combine well, then cover and refrigerate.
- Place chicken in a resealable plastic bag. Use a meat mallet (smooth side) to pound chicken to a ½ inch thickness. Remove from bag and season with 2 tablespoons of Nashville Hot Chicken rub.
- Pour buttermilk into a pie plate, then whisk together flour, salt, and remaining Nashville Hot Chicken rub in another pie plate. Dip seasoned cutlets one by one in buttermilk, then dredge in flour mixture. Place on a sheet tray, then heat oil in a deep saucepan or skillet.
- Once oil reaches 350 F, carefully set chicken in hot oil. Fry chicken for 5 to 7 minutes, until golden brown. Transfer breaded chicken to a wire rack with sheet tray underneath. Cool for a few minutes.
- Sandwich Assembly: Spoon spicy mayonnaise on the bottom half of the butter-toasted Kaiser roll. Top with fried chicken, spicy slaw, spicy bread & butter pickles, and top half of roll. Serve warm.
