This jalapeno stuffed pork tenderloin will have your coming back for seconds and maybe even thirds.
Ingredients
- 2 LB – Pork Tenderloin
- 4 – Peaches
- 2 – Jalapenos

4 T – BBQ General SPG Rub
- 12 Slice – Bacon (not thick cut)

½ C – Peach Buzz BBQ Sauce
Directions
Preheat smoker or grill to 275 degrees.
- Trim the pork tenderloin as needed and then butterfly it. Mak a slice, about ½” from the bottom of the loin lengthwise. Continue cutting and “unroll” the pork as you cut to create a flat piece of meat.
- Pound out the meat to about ¾” thick.
Season with BBQ General-SPG.
- Peel and slice the peaches and lay them out in lines on the pork, leaving about 1” between each row.
- Slice the jalapenos and lay them out in the gaps between the peaches.
- Roll the pork back up and set aside.
- Make a 6 X 6 bacon weave.
- Roll/wrap the stuffed pork in the bacon weave and secure with toothpicks on the ends.
- Place the roast on the smoker and cook for 1 ½ to 2 hours until the bacon weave is cooked to your liking.
- Baste the roast with Peach buzz and allow to smoke for an additional 15 minutes.
- Remove from the smoker and rest for 15 minutes before slicing and serving.
