Take a trip to flavor town with these El Jefe honey adobo and Ancho Coffee rub tri tip tacos!
Ingredients
- 2 LB – Tritip roast
-
5 T – Eye Opener Ancho Coffee rub
- 8 – Corn Tortillas

½ C – Onion, diced
-
¼ C – Cilantro, diced
-
¼ C – El Jefe Taco Sauce
Directions
- Preheat grill to 350 degrees, set up for indirect grilling.
- Trim the tritip as necessary and then generously season with Eye Opener rub.
- Allow the meat to rest at room temp for 20 minutes to adhere the meat.
- Insert probe in the tritip and place on the grill.
- Grill for 25-40 minutes until the internal temperature of the meat reaches 125 degrees.
- Pull and rest for 15 minutes before slicing.
- Heat tortillas and then build the tacos.
- Lay down a few slices of meat and top the tacos with diced onion, chopped cilantro and a drizzle of El Jefe sauce.
