Ingredients
- 2 LB – Pork Belly

3 T – Lumberjack Hickory Maple Seasoning
- 1 LB – Brussel Sprouts

½ C – Chicken Stock

½ C – Maple Syrup
Directions
- Preheat smoker to 250 degrees.
- Cut the pork belly into 1 ½” cubes. Season the pork belly generously with Lumberjack.
- Place the pork belly on a rack lined tray and then onto the smoker for 2 hours.
- Trim the brussel sprouts as needed and add them to the tray along with the pork belly.
- Pour in the chicken stock and cover the whole tray with foil.
- Return to the smoker for 1 hour until both the brussels and pork belly are tender.
- Using 6” skewers, skewer a piece of pork belly, followed by a brussel sprout and then one more piece of pork belly.
- Baste all the skewers with maple syrup and then place the skewers directly on the smoker for 5-10 minutes.
- Baste again and then allow the skewers to rest for 5 minutes before serving.
- Enjoy!
