Ingredients

1 C – Water

6 T – Butter
-
1 C – Flour
- Pinch – Kosher Salt
- 2 – Eggs

1 ½ C – Pulled Pork

¾ C – Apple Pie Rub
Directions
- In a large saucepan over medium heat, add water, butter, and sugar. Bring to a boil. Turn off heat and add flour and salt. Stir with a wooden spoon until thickened, 30 seconds. Let mixture cool for 10 minutes.
- Chop the pork with a knife until the pieces will be small enough to pass through a piping bag.
Using a hand mixer, beat eggs into the batter one at a time until combined. Then fold in the pork.
- Transfer mixture to a piping bag fitted with a large open star tip.
Preheat fryer to 350 degrees.
- Pipe the Churro mix directly into the oil, about 7” in length. Use kitchen scissors to cut off dough from piping bag.
- Fry until golden, 4 to 5 minutes, turning ½ way through.
- Remove churros with a slotted spoon or tongs and immediately roll churros in Apple Pie Rub. Then place on a cooling rack.
- Serve churros with Bourbon Barrel dipping sauce.
