They say chicken soup warms the soul but that is only because they haven't had our Roasted Tomato Soup! A rich spoonful of creamy tomato herb soup wouldn't be complete without a grilled cheese sandwich to dunk. Now, this is a complete meal built to satisfy!
Ingredients

16 Roma Tomatos

1 Onion
-
2 Carrots
-
2 Stalks Celery
-
1 Shallot
-
1 Bulb Garlic
-
2 T Good Fella Italian Herb
-
3 T Olive Oil
-
1 Oz Basil Leaves- Fresh

1 C Heavy Cream

TT Salt
Directions
Preheat oven to 400 degrees.
Core the tomatoes and cut in ½. Toss in olive oil and season with Good Fella.
Spread the tomatoes on a sheet tray.
Peel and roughly chop the vegetables. Toss in olive oil and season with Good Fella.
Cut the tip off of the bulb of garlic and drizzle with oil.
Place the vegetables and garlic on a sheet tray.
Place both sheet trays in the oven for 30 minutes.
Rotate the trays and cook for another 15-20 minutes until all the vegetables are tender.
Place the roasted vegetables in a blender and squeeze out the roasted garlic.
Roughly chop basil leaves and add to the blender.
Blend until smooth and then pour into a medium saucepan.
Bring to a simmer and add cream. Return to a simmer and cook for 10 minutes.
Serve and garnish with parmesan cheese, fresh basil and olive oil.
