Ingredients
- 1 LB – Mild Italian Sausage
- 6 – Hard Boiled Eggs

1 C – Flour

2 T – BBQ General SPG Rub
- 3 – Eggs

2 C – Panko breadcrumbs

1 C – Mayo
-
3 T – Bier Hall Mustard

Directions
- Divide the sausage into 6 equal portions.
- Use your hands to flatten the sausage into a 4” round.
- Wrap a peeled hard-boiled egg in each piece of sausage and pinch the seams to make sure it is well sealed.
- Mix the flour and the BBQ General SPG rub together and then set up your breading station. Flour, beaten eggs and breadcrumbs, each in separate dishes.
- Roll the sausage wrapped eggs in flour, then place them into the beaten eggs and coat them well.
- Then roll it in the breadcrumbs and coat well, very gently pressing down on the crumbs to adhere them.
- Preheat fryer to 325 degrees.
- Fry the scotch eggs for 6-8 minutes until the sausage is fully cooked (155 degrees internal)
- While the eggs are frying, make the sauce by stirring together the mayo bier hall mustard and the mayo.
- Serve the eggs, cut in ½ with a drizzle of sauce and some chopped parsley for garnish.
