Directions
- Preheat the Pro Classic to 180 degrees.
- Cut the fruit in ½ and place on a rack lined tray.
- Fill a sawdust pan 1/3 full of sawdust and moisten.
- Place the fruit in the smoker and place sawdust pan on the burner.
- Lower the temperature to 120 degrees.
- Smoke the fruit for 1 hour.
- Remove the fruit and then juice into a bowl. Place in the fridge to cool.
- In a small saucepot, combine the sugar and water.
- Cook over medium heat, stirring often until the sugar is fully dissolved. This is now simple syrup.
- Place the simple syrup in a container and into the fridge to cool.
- Combine the juice from the fruit (about 2 cups) with the simple syrup. This is now your sour mix.
- Combine 1 ½ oz of simple syrup and 2 oz of bourbon in a cocktail shaker.
- Add ice and cover. Shake for 30 seconds.
- Pour into a rocks glass with ice and enjoy!
