Ingredients
- 1 LB – Sirloin Tender Steak

3 T– Cracked Black Pepper
-
2 T – Olive Oil
- 2 – Onions
- 2 – Shallots
- 4 Clove – Garlic

6 T – Butter
-
¼ C - Flour
-
¼ C – Bourbon
-
5 C – Beef Broth
-
3 T – Chop Shop
- 1 ½ LB – Baby Potatoes
-
1 C – Heavy Cream
-
½ C – Parsley, chopped
Directions
- Season the steaks generously with cracked black pepper.
- Heat a stock pot over medium/high heat and add 2 TB of oil.
- Sear off the steaks and cook to medium rare. Set aside.
- Julienne the onions and shallots and add them to the stock pot, add a few more TB of olive oil if needed. Sauté until the onions are caramelized.
- Add butter and garlic, cook for 2 minutes.
- Add flour. Stir and cook 2 minutes.
- Deglaze with bourbon.
- Add beef broth and bring to a simmer.
- Add heavy cream and potatoes. Cook until potatoes are fork tender.
- Dice the steak into 1” cubes and add to the soup. Add any dripings from the cutting board to the soup as well.
- Return to a simmer and season to taste.
