Ingredients
- 1 ½ LB – Ground Beef

1 ½ TB – Umami Butter Burger Blend
- 4 – Brioche Burger Buns
- 2 Cup - Arugula
- 1 Cup – Parmesan Cheese
- 4 – Portabella Mushrooms
- 1 TB – Olive Oil
- 2 TB – Balsamic Vinegar

1 TB – Umami Butter Burger Blend
- 12 oz – Bacon
- 6 – Roma Tomatoes, diced
- 3 TB – Balsamic Vinegar
- ½ Cup - Sugar

Tomato Bacon Jam
Directions
- Portion the ground beef and form into 6 oz patties. Season the patties generously with Umami Butter Burger Blend.
- Clean the portabella mushrooms by scraping out the gills.
- Rub and marinate the mushrooms in olive oil, balsamic vinegar and Umami Butter Blend.
- Make the tomato bacon jam.
- Roughly chop the bacon and render it in a medium sized pot over medium heat.
- Drain off the rendered bacon fat and then add the diced tomatoes, balsamic vinegar and sugar to the pot.
- Return to medium low heat and cook until the jam has reduced and thickened.
- Preheat your griddle to 350 degrees and fire up the grill.
- Spread out ¼ Cup of parmesan cheese in a 5” circle on the griddle. Allow to cook/toast until the cheese is browned.
- Carefully use a scraper or metal spatula to flip the parmesan crisp and cook for 1 minute.
- Remove and set aside to cool while you grill your burgers.
- Set the burgers over direct heat to grill to your desired temp.
- Grill the mushrooms until tender.
- Toast your burger buns if desired and then build.
- Place ½ cup of arugula on the bottom bun followed by a burger patty.
- Place a parmesan crisp on top of the patty followed by a grilled mushroom and a few tablespoons of the bacon jam.
- Top and serve.
