Ingredients
- 1 LB – Bacon, thick cut
- 3 Cup – Corn
- ½ Cup – Flour
- ½ Cup – Cornmeal
- 2 tsp – Bacon Bomb
- ¼ Cup – Parsley, Chopped
- 2 – Eggs
- ¾ Cup – Cheddar Cheese, Shredded
- Sour Cream for dipping
Directions
- Dice the bacon and place in a skillet.
- Cook over medium heat until the bacon is rendered and crispy.
- Strain the bacon, reserving the bacon fat for later.
- Measure 1 cup of cooked bacon and add it to a bowl.
- Add in the corn, flour, cornmeal, Bacon Bomb, chopped parsley and shredded cheddar cheese.
- Lightly beat the eggs in a separate bowl and then add to the mixture.
- Stir until well combined and cakey. If the batter seems too dry add 2-3 TB of water.
- Heat griddle to 350 degrees.
- Portion the batter into 8 cakes.
- Drizzle some bacon fat onto the griddle and then place your cakes down.
- Cook for 4-5 minutes until seared.
- Flip and cook an additional 4-5 minutes.
- Remove from the griddle and serve with a side of sour cream for dipping.
