When it says classic you know it's good! This Classic Elotes, or Mexican Street Corn, takes a summer favorite- the an ear of corn, adds a nice char, rolled in creamy, spicy, buttery sauce, loaded with shredded Cotija cheese and fiesta time!

Ingredients

1/2 Cup Sugar

2 T Cooking Oil

4 Ears Corn- Shucked

1/2 Cup Mayo
-
2 T Sour Cream
-
3 T Elote Loco Street Corn Blend
-
3/4 Cup Cotija Cheese- Shredded

1 T Lime Juice
-
1 T Cilantro- Chopped
Directions
Heat up the grill.
In a pot, bring 3 quarts of water to a boil and add the sugar. Placed the corn in the boiling water for 10 -15 minutes or until just barely tender.
Remove from the water and dry off.
Rub the ears of corn with oil and place on the grill. Rotate often so the corn does not burn. Remove when the corn is evenly browned
Mix the mayo, sour cream and 2 TB of Elote Loco Seasoning together. Spread over the ears of corn.
Sprinkle the Cotija cheese evenly over the corn.
Transfer the corn to a serving platter. Top with another sprinkle of Elote Loco and chopped cilantro.
