Ingredients
- 5 LB – Chuck Roast

4 TB – Bier Hall Mustard

¾ Cup – Rodeo Rub

1 ½ Cup – Cherry Bomb BBQ Sauce
- 1 Stick – Butter (unsalted)
Directions
- Remove the chuck roast from the fridge and let it sit at room temperature while the smoker preheats.
- Preheat smoker to 250 degrees.
- Cut the chuck roast into 2” cubes and slather the pieces with Bier Hall mustard.
- Season the cubes generously with Rodeo Rub and then let them rest for 20 minutes to allow the seasoning to adhere.
- Place the meat directly on the smoker and smoke for 2-3 hours.
- Combine the Cherry Bomb BBQ sauce and butter in a small saucepot and heat until the butter is melted, stir to combine.
- Once the seasoning is well tacked to the meat, place the meat in an aluminum pan.
- Pour in the sauce and stir gently to cover the meat in sauce.
- Cover the pan with foil and place back on the smoker.
- Cook for an additional 4-5 hours until the meat is fork tender.
- Remove the pan from the smoker and peel back a corner of the foil to vent. Rest for 20 minutes.
- Serve and enjoy!
